Colour:  Cloudy, vibrant sunshine yellow. Darker trub
Carbonation: Fine, frequently streaming bubbles


Cider Crate Tasting Notes:

Smell: Medium aroma. Cellared, pulpy apples. Musty, funky, tannic. Some crabapple notes.
Initial Taste: Light bite. Sharp apples, that taste fermented/cellared. Crab apple flavours, mixed with heritage and bittersharp varieties. Bone dry..
After Taste: Apple slowly winds down, leaving tannins and cellaring notes. Lingering bittersharp and some mustiness.
On ice: Flavour greatly reduced. Body and bubbles almost gone.  Apple dramatically impacted.

Additional Notes:  Chateau de Cartes Aurea Mediocratas 2021 Brut is a taste of Europe, done Quebecois. Musty, cellaring notes greet you quickly. Tannic, crap apple are upfront, moving more to heritage and bittersharp apples in the middle/ending. But as apple does wind down, it leaves some grit on the palate, including some tannins. A very dry cider with a good sparkle, we do not recommend this on ice – it strips it of almost everything it aims to do.
