Cider Crate Tasting Notes:
Smell: Strong aroma. Hefty ice cider astringency. Boozy. Crisp apples. Brown sugar.
Initial Taste: Medium bite. Sharp, semi-acidic apples. Crisp blend of apple characteristics.
After Taste: Hefty barreling comes through on the exhale. Ice cider syrupy notes, with some brown sugar/maple syrup-like notes. Lingering crisp mcintosh apples.
On ice: Strips a lot of body and acidity. Much less barreling. Dulls the cider greatly.
Additional Notes: Domaine Heritage’s Abbott’s Corner is an ice cider-barrel aged cider that certainly shows a lot of those characteristics in the finish. Made with cortlands and mcintosh apples, it is a very crisp, semi-acidic, clean apple base that tickles the senses. What is intriguing are the bold ice cider barreling notes, that come out in the end as astringency spirit-y notes, woody barreling and some syrupy, brown-sugar like notes. Both the crisp apples and syrupy ice cider elements blend well in harmony. Memories of Europe, made-distinctively Quebec.
