Cider Crate Tasting Notes:
Smell: Light aroma. A clean, forward, juicy apple. Some fermentation.
Initial Taste: Strong sensation from carbonation. A medley and layers of apple notes – many heritage varietals and characteristics. Crisp, with some tannins, but more acidity upfront. Very dry, it also got pear drop and an approachable leather. Some light bitterness.
After Taste: Apples become a bit more aged tasting and heritage focused – maybe even a bit caramelized from the bittersweets here too. Stone fruit and grass notes at the finish.
On ice: Decently watered down, including carbonation.
Additional Notes: Woodfolk’s 2024 Little Twig is a modern cider with a lot of unique elements that draws heavily from traditional apples and methods, but remains firmly a creation of the 2020s. The carbonation does have an overwhelming sensation that may make you do a hard swallow to tolerate it at first. However, after it mellows, a unique journey of apple notes takes you along for the ride. You get a lot of the different notes from the apples listed in the ingredients – sharp, bittersweet and bittersharps. It’s crisp, with some softer tannins, but more acidity punching. It’s a very dry cider that’s bright with some light bitterness. It becomes more heritage varietal tasting as it goes along, with some of the caramelizing bittersweets – like the Muscadet de Dieppe – coming through. Amongst the unique notes are stonefruit, leather and grass. An elevated, modern Canadian creation drawing from many sources.
