Cider Crate Tasting Notes:
Smell: Strong aroma. Funky, sharp, bitter apple with some peel. Wild aspects and bold fermentation notes.
Initial Taste: Medium bite from carbonation. A quiet start, some muted and semi-crisp apple. Then it builds, in tannin, intensity and astringency. Waxy peel note. Wild/funky and earthy notes. Natural apple bitterness.
After Taste: Some fleshy apple emerges alongside peel aspects. Becomes drier in sweetness and mouthfeel here. Lingering wild notes but they are rather clean here.
On ice: Thinner bodied. Cleaner – a lot of fermentation and funk removed.
Additional Notes: Windswept’s Workman’s Creek is a wild ferment that definitely delivers on this promise, but a more controlled, clean funk than others of the style. It starts quieter than it ends up – something we don’t come across much. It really develops into a bold cider, with a growing tannin and astringency from such. It’s got some waxy peel flavours and feelings, as well as some natural apple bitterness and fleshy apple aspects near the finish.
