Cider Crate Tasting Notes:
Smell: Medium aroma. Soft, pulpy apples. Some volatile acidity and sourness.
Initial Taste: Medium bite from carbonation. Sharpness from acidity, but some fleshy apple elements. Quickly sour and with a barnyard funk that could be intense for some.
After Taste: Once bold elements like sourness and acidity dwindle, softer apple skin notes emerge – in particular red varietal notes. A bit astringent/drying at the finish from tannin + macerated apple skins.
On ice: Cuts some of the acidity – making it more wine-like.
Additional Notes: Traynor Vineyard’s first foray into cider is called Pomme Pomme Pomme, a 9.4% apple pet nat. Because they lacked an apple press, they fermented and macerated (left the juice on top) of the apple skins, and then pressed the soaked, broken down apples. Like their wines, it has a lot of sourness and volatile acidity to it – these elements dominate upfront. You then get the softer apple notes in the finish, in particular red apple characteristics. It becomes rather drying for the mouth at the end, maybe even chalky to some, most likely from the tannins from the apple skins. Some funk/barnyard notes.
