Cider Crate Tasting Notes:
Smell: Strong aroma. Heritage apple. Funky and minor acetic aspects.
Initial Taste: Strong bite from carbonation. Quickly acidic and sharp dry heritage apple. Bitterness and tonic notes. Medium tannin.
After Taste: Apple becomes a bit earthier. Some funk emerges that lingers, but not overpowering. Citrus-like hints. Tannic notes slowly dwindle.
On ice: Less carbonation. Thinner body.
Additional Notes: Three Dog Winery’s 2023 Cider is made with local apples from their neighbour, and it is a highly sparkling offering. Brut, it is rather dry from start to finish. It’s got a sharper start – from the forceful carbonation, with acidic and sharp heritage apple notes. Some tannin, but not driven by it. It does have a tonic taste and bitterness from the carbonation process. As it goes along, it becomes a bit funkier and earthier from the apples. Thinner on ice, if bolder notes or carbonation is too much for you. Definitely a farm-based offering with winery-inspiration and methods.
