Cider Crate Tasting Notes:
Smell: Medium aroma. Pulpy, crisp apple. Some bittersharp hints. Some acidity.
Initial Taste: Medium bite from carbonation and acidity. Sharp, acidic but clean and bright apple medley flavours. Medium tannic levels.
After Taste: Tannins start to diminish, becomes a cleaner, sharper apple. Tangy, semi-dry finish.
On ice: Carbonation reduced. Slightly less tangy and less tannins. Minimal change to apple profile.
Additional Notes: A very clean offering from Spy, this Never Say Never is made with organic apples harvested at their estate. Crisp, it has a tangy acidity from start to finish. Very apple forward with some mild earthy, natural hints. Straightforward apple cider with some depth – from fermentation process + heritage apples – but not too complex to not be appreciated by most.
