Cider Crate Tasting Notes:

Smell: Medium aroma. Dank pear. Funky. Earthy, toasted kiln, and minerality.
Initial Taste: Medium bite. Acidic, acetic and sour pear. Herby and funky. Saline-like notes.
After Taste: Pears become more toasted tasting with some earthiness. Sourness weakens. Mineral notes. Finishes on a toasted caramel note.
On ice: Reduced flavours and body. Alcoholic elements are more obvious.

Additional Notes:  Revel’s 2022 Breccia is a perry aged in large amphora clay containers. The pear base is funky, sour, and mostly dry, but as the label states, some pear sugars are unfermentable, so there is a minor presence of them. A cider that is more process and fermentation note heavy, It is more acidic and acetic then traditional pear notes and becomes softer as it goes on, with saline notes and minerality obvious throughout. The pears become almost toasted and caramelized into the finish, possibly from its aging vessel. You get a generic herbiness and earthiness to it, possibly from the clay as well. A lot of trub that is suspended in the liquid and congregates at the bottom. Made with brett and it shows.
