Smell: Light aroma. Bright apple with some acidity and peel grit.
Initial Taste: Mild bite + tingle. Dry, peel-oriented apple. Mild earthiness and hints of natural apple sweetness. Semi-crisp and acidic. Bittersharp apples.
After Taste: Tingle and peel grit soften and more flesh notes emerge. A clean finish with minerality + saline elements.
On ice: Carbonation reduced. Strips a lot of flavour and essence.
Additional Notes: Red Island Cider’s Father Walker’s Dry Cider is indeed a dry offering that is on the lighter, softer cider side – compared to other similar dry ciders in Canada. Nothing is too bold or aggressive with balanced tannins, acidity profile and other aspects. It starts more peel flavoured, dry and with a bit of grit and earthiness. It becomes cleaner into the finish with more smooth, fleshy notes. Unique minerality and saline notes at the close.
