Cider Crate Tasting Notes:
Smell: Medium aroma. Cellared apples. Effervescent. Hints of fermentation.
Initial Taste: Medium bite from carbonation, some bubbles may enter the nose. A strong acidity. Puckering, tart, dry apples. Some rudimental funkiness. Yeast ester notes that add a fruitness to it – pomegranate-like hints.
After Taste: Cellaring mustiness comes through. Apples become a bit brighter but don’t linger long.
On ice: Thinner body. Reduces sourness and bold elements. Watered down.
Additional Notes: Quebrada del Chucao’s Brut is a sparkling offering from Chile, made with apples in the south of the country. An extra dry choice, it has a lot of bold elements upfront – including a strong acidity, a puckering tartness, and some rudimental funkiness. There are a lot of esters from the yeast that add fruit-like notes, in particular we got a faint pomegranate-like. You get some old world cellaring notes in the finish, but the apples are mostly gone here. A lot of foam and bubbles when poured, that makes it very lively when first to start.
