Smell: Medium aroma. Rustic apples with tannin. Hint of funk/earthiness.
Initial Taste: Light bite but slightly foamy when sipped. Creamy apple that starts mild. Some champagne yeast notes. Red apple notes, like macintosh noticeable, in particular flesh. Crisp but slightly earthy.
After Taste: Becomes smoother. More tannins and funk peak through. Medium finish that’s clean. Saline notes linger.
On ice: Thinner mouthfeel, carbonation very reduced. Slightly brighter.
Additional Notes: Domaine Lafrance’s Bin Kin Cider is an unfiltered pet nat apple offering, that could be a substitute for champagne.
