Cider Crate Tasting Notes:
Smell: Medium aroma. Woodsy, wild, aged apples. Bruised apple notes. Farmhouse.
Initial Taste: Light bite – some effervescence. Earthy, wild apples. Bittersharp bruised-tasting apples. Farmhouse funk and sourness. Volatile acidity.
After Taste: Oak and woody notes come out. Hints of a dry white wine. Apple slowly dissipates with a long aftertaste of fermentation elements. .
On ice: Lowered acidity.
Additional Notes: 1818 Cider’s All Together is a wine-barrel aged offering made with forged wild apples. A funky and sour offering overall, there is some volatile acidity, and it gives us some Spanish sidra vibes. The apples are bittersharp adding a bit of tannin into the blend. The promised barreling really shows up in the finish, becoming woodsy tasting. Yeast esters add to the body and flavour too.
