Cider Crate Tasting Notes:
Smell: Light aroma. Crisp, juicy apple. Mild fermentation.
Initial Taste: Minimal bite from acidity. Clean, juice-forward, bright apples. Delicate fermentation notes. Dry. White grape hints.
After Taste: Apple slowly dwindles. Somewhat buttery into the finish. Wine-like finish due to the absence of carbonation.
On ice: Even cleaner. Thinner body. Still a bright, juice-forward apple. Even more focused.
Additional Notes: FieldBird’s 2018 Northern Spy is a straightforward single varietal cider that features a bright and clean palate of characteristics. Acidic and bright, it strongly shows the Northern Spy variety with clarity and focus. Crisp and juice-forward, what really stood out to us was the cleanness of this cider. Delicate fermentation notes that show the careful process this would have been crafted, but this really keeps the intent on the one variety of apple itself. Slightly buttery in the finish, with memories of a good chardonnay. At 2g/L its dry but still bright, a natural apple sweetness is obvious.
