Cider Crate Tasting Notes:

Smell: Light aroma. Peach pit and early season peach. Mild bourbon notes. Crisp apples.
Initial Taste: Minimal bite. Yellow unripe peach, including pit notes. Some funk and dankness. Fleshy apple. Mild bourbon undertones. Oak/wood hints from barreling.
After Taste: Becomes less peach focused. More fermentation and spirit notes emerge. Some honey notes come through to finish off the drink as it cleans out well.
On ice: Thinner body. Watered down flavour.

Additional Notes:  Fielding’s Peach Cider is very different from other craft peach ciders in Ontario. There is little to no sweetness from the peach or in the cider. Featuring some fermentation and funky/dank notes, you also get some mild notes from the bourbon barreling, but no spirit astringency. It’s not overly peach or apple focused either way, with the peach showing unripe and pit characteristics. Maybe not what you’d expect in your first sip, as it’s a non-traditional peach-infused cider.
