Cider Crate Tasting Notes:

Smell: Strona aroma. Hefty sour crab apple. Waxy peel.
Initial Taste: Medium bite from carbonation and a sharp acidity. Quick and rich sour crab apple. A gripping tannin that builds. Waxy red peel flavour.
After Taste: Tannins continue to dry out mouth. Lingering crab apple notes and sourness.
On ice: Tannins reduced, slightly less sharp to the palate.

Additional Notes: Calgary’s own Uncommon Cider brings an Uncommon Expression cider in their Calgary Crab Apple (2022). Made with 100% local dolgo crab apples, this is a shock to the senses, and a good lesson in what this apple defines as. It starts off with a sharp acidity and sourness. Rich dolgo notes – including waxy red peel notes – emerge once the bolder elements wash out a bit. The tannins are gripping and build as it goes along, leaving the mouth very sandpaper-like. The crisp apple elements and notes reduce before the tannins do.
