Cider Crate Tasting Notes:
Smell: Medium aroma. Sharp, pulpy apple. Bittersharp and tart notes.
Initial Taste: Light bite. A semi-astringent, hot alcohol start, it’s boozy. Develops into a pulpy, dry apple with some tartness. Some bittersweet notes, but not too gripping. Baked apple and bourbon notes. A lot of journey in this.
After Taste: Long lasting with balanced dry tannins. Becomes more sharp, ida-red focused, but some bittersweet, caramelized apple notes remain. Slightly straw, dry and chalky in a good way.
On ice: Very stripped of body. Much reduced tannins and reduced overall.
Additional Notes: The Wilderland (2024) by Woodfolk Cider is a unique tug of war between bittersweet and sharp varietal characteristics on the palate – it’s a unique compromise between traditional and modern/drinkable styles, falling in the middle of the spec. Sometimes it’s thicker and semi-tannic, sometimes it’s pulpier and crisper and sometimes its a bit thinner and fermentation focused. A lot going on and a big change from the first pour to the last sip. Be sure to swirl it, as there is a lot of pulp if not blended in the glass. Keep ice away!
