Cider Crate Tasting Notes:

Smell: Strong aroma. Dank, sour, funky and dry apple. Acetic. Minerality.
Initial Taste: Medium bite. Acidity and astringency. Bone dry apples, that have golden/yellow characteristics. Some sourness and funk. Slight vinegary with lots of body.
After Taste: Becomes a brighter apple. Some barnyard funk that lingers. Orange wine-like finish and saline notes.
On ice: Less intensity.

Additional Notes:  Au Pied de Cochon’s Pomme à Chevreuil  is a bone dry, sour cider made with apples from their orchard. A cider that’s been macerated on skins for 24 hours (and it shows), its unfiltered and funky. You get some sourness and acidity upfront, with a hint of apple vinegar. The apple base tastes more golden and yellow variety dominant (unsure types used however). It becomes bright as it goes on but remains dry. Some barnyard funk defines this. Drinks similar to an orange wine because of the maceration. Minerality and saline notes add unique notes.
