Cider Crate Tasting Notes:
Smell: Medium aroma. Sharp apples. Faint cherry. Tonic notes and effervescent.
Initial Taste: Strong bite from carbonation. Sharp fleshy apple base. Fermentation and lighty funkiness. Slight vegetable elements.
After Taste: Dry, semi-tart cherry shows a bit more. Tonic and carbonation flavours. Ends on a slightly crisp apple that lingers with some funk notes.
On ice: Reduced carbonation. More tart cherries come through. More cider and less sparkling method-like.
Additional Notes: Niagara Teaching Winery’s Taylor Road Cider series is made by the students at the school. This Cherry Cider definitely drinks more like a sparkling wine, than a juicy, crisp cherry adjunct cider. The cherry is lightly infused, dry and slightly tart. The apple base is sharp and is the last thing you taste. This is heavily carbonated, and you get a lot of body and taste from the carbonation method that is used. The carbonation is foamy when first sipped and it distracts from the fruits. You also get some tonic and vegetal notes from the carbonation as a primary flavour too. This cider would be a good substitution for a sparkling wine and the cherry adds a unique element for the style.
