Cider Crate Tasting Notes:
Smell: Medium aroma. Oak/wood. Minerality. Bright pulpy apples, hint of funk.
Initial Taste: Minimal bite. Slow to build red wine and barreling notes. Bright, fleshy apples. Mild hint of astringency. Slightly smoky and leathery.
After Taste: Apples dwindle, with more barreling notes coming out here. Ends on mature, dry red wine notes. Fermentation notes linger awhile.
On ice: Less apple and a lot less carbonation. Much more red wine focused.
Additional Notes: Slabtown’s Cab Sauv is another member of their small batch barrel-aged lineup, but made iby barreling in Cabernet Sauvignon red wine barrels. Its most definitely red wine focused the majority of the way, but it takes a bit to build to this. Bright apples upfront, replaced more with red wine and barreling notes in the finish. Some unique notes that add depth include smokiness and leather notes, and some wine/barreling astringency. A very dry offering, but it may only appeal to fans of red wine because its so dry and mature tasting.
