Smell: Strong aroma. Cellard apple thats musty with a hint of berries
Initial Taste: Strong bite from carbonation and acidity. Thick pulpy apples that are dry, with heavy tannic elements and dry, slightly tart black currant. Mostly apple upfront to start with lots of grit and woody elements. Cellared notes.
After Taste: Becomes more berry and fermentation flavoured as time goes in, apples reduces to minimal. Finishes on an earthy, punchy berry note. Herb-like elements in the finish.
On ice: Reduced flavour and intensity
Additional Notes: The Zinzolin by Cidre Sauvageon is a rustic and wild experience. An intense carbonation and apple thats dry and bright thats muddied by the tart, earthy blackcurrant elements making it much thicker. A lot going on with this offering. Lots of must and trub, it is a bold cider. A unique woody/earthy element to it – as well as old world cellaring notes. Unfiltered is putting it lightly (meaning particles) and its so dry (but flavourful) it leaves you licking your lips. Very gritty on the palate and old-world inspired.
