Cider Crate Tasting Notes:
Smell: Strong musty aroma. Funky, earthy, bitter notes. Wood/oak notes from fermentation.
Initial Taste: No bite, a truly still cider. Some tanginess and acidity. Mature apple flavour, with a lot of must and funk.
After Taste: Musty apple continues. Oak notes from barreling become more defined on the pallet. Elements similar to a white wine. Creamy, dry apple finish.
On ice: Ice makes the cider thinner, less tangy and have less flavour. Less aftertaste length.
Additional Notes: Spirit Tree’s Estate Reserve is a mature, rare offering from Spirit Tree. A truly still cider, it confused our palates, as we are typically primed for some carbonation sensation when consuming ciders. A lot of funk and must are noticeable; with the oak barreling process coming through in the flavour as well. It has many white wine characteristics and the aging process is very evident. It is different for a Spirit Tree cider, but it still has many familiar elements.
