Cider Crate Tasting Notes:
Smell: Strong aroma. Caramelized sweet apples with a light astringency
Initial Taste: Minimal bite. Sweet thick and syrupy caramelized apple with a slightly burnt honey note
After Taste: Elements from the barrels become more noticeable (woody and earthy) as the apples reduce. Lingers a while but with little apple elements.
On ice: Watered down and much less flavourful
Additional Notes: The Pomme D’Or by Rosewood Estate Winery is a Cyser (apples with honey) that has been fortified into a dessert-style spirit at 20%. It’s sweeter than many other apple spirit offerings yet still has a nice kick. Honey provides a unique element, along with the barreling notes that are not overpowering.

From Rosewood Winery: The cyser-Bochet (Cyser being honey wine made with apple and bochet being a honey wine made of burnt hone) is bone dry, all sugar was consumed during ferment or the forced caramelization of the honey prior to ferment. Wild fermented. It was aged for 1.5 years in French oak prior to 1.5 years in freshly emptied calvados barrels (French apple brandy barrels, very rare to get). It was bottled without filtration or fining. It’s a one of a kind production
