Cider Crate Tasting Notes:
Smell: Strong aroma. Forward pine notes, some mint/herbalness. Some creaminess and funk.
Initial Taste: Light bite from carbonation. Creamy , soft, bright apple. Fragrant spruce and pine notes – woodsy/forest forward. Hints of funk, herb/mint-like notes – cooling in the mouth.
After Taste: Spruce takes over palate – being a herby, bouquet of flora notes. Fresh tasting and cooling sensation remains on the palate.
On ice: Slightly thinner body. Minimal change.
Additional Notes: The Grey and Gold Spruce of the Bruce is a walk in a forrest conveniently in a bottle – it tastes like Christmas. Starting off with some creamy, soft apple, the promised spruce comes through strong and stays. It tastes crisp and is cooling on the palate – similar to the sensation of crisp air on a cool day. Aside from its fauna and floral notes, the spruce comes across as a bit herby and mint like. It becomes spruce dominate in the finish and it lingers – with the cooling sensation -for while. Hints of funk – it is a wild ferment. Very different than previous versions/our first review. Comes with a spruce tip in the bottle.
