Cider Crate Tasting Notes:
Smell: Strong aroma. Semi-bitter, funky and cellared.
Initial Taste: Light bite from carbonation. Once the bite dissipates, the flavour really becomes present. Rustic and earthy dry apples with some funky notes. Crab apple upfront.
After Taste: Dissipates quickly and is a very light aftertaste for the funky, dry apple cider. More earthy and pine/spruce taste. Dry and event slightly fruity (Banana/pineapple)
On ice: Dramatically reduced flavour and intensity. Carbonation and mouthfeel reduced.
Additional Notes: The Willie by Fleuri is a wild yeast (uncontrolled fermentation process from the national surrounding) as opposed to adding yeast that is much cleaner than most wild ferments. It’s funky, semi-dry but not overpowering (often hard to find a balance). Earthy flora tastes like pine and spruce provide a unique layer with almost some fruit finish in the aftertaste. A remarkably dry yet flavourful cider.
