Cider Crate Tasting Notes:
Smell: Light aroma. Astringent and earthy apples
Initial Taste: No bite. Slow building, acidic and semi-tangy apples with earthy elements.
After Taste: Continues to grow and remain earthy. Northern Spy heritage apples leave a semi-sweet and tangy flavour – that compliment the oak elements from the barreling process.
On ice: Slightly less tangy and sour on ice. Apple is sharper.
Additional Notes: A still cider, the Northern Spy from Fieldbird is a sophisticated offering. Primarily featuring Northen Spy apples and up to a year-long barreling process, its earthy, slightly tangy and stays on the palate for a long time. Possibly not a beginner cider, but still approachable by most, it carries many elements that come from the wine background of the producer and location. Would pair nicely with a chicken dinner.
