Cider Crate Tasting Notes:

Smell: Strong aroma. Funky, acidic apple that is slightly crisp. Tannic.
Initial Taste: Strong bite from carbonation and acidity. Quick hit of funk and farm fermentation notes. Apples become more vivid and bright. Apple sourness and peel. Gritty tannins.
After Taste: Apples become smoother, with carbonation dwindling slowly. Some dessert apples were noticeable. Apple flesh peaks through the complexity and layers. Ends dry but up-lifting.
On ice: Carbonation almost entirely reduced. Less fermentation and acidity.

Additional Notes:  Cold Creek Vineyard’s Éirinn go Brách (2020) is a brilliant and complex cider that has many layers and much depth. Carbonation is heavy at first, it greets you quickly, and dwindles slowly. A lot of fermentation notes and farmhouse funk upfront for the palate to dissect, but it becomes smoother decently quickly. The apple base shows many characteristics, with it being very peel and tannin-heavy upfront. Acidity-driven the majority of the journey, very juicy and crisp overall as well. Dessert apple notes and flesh appear in the finish, once the stronger and bolder elements subside. Ends dry but up-lifting. Made with Macintosh apples and French Oak barreling.
